Reason to go Gluten-Free and my 5 favorites substitutes to make it easy


When it comes to eat gluten free we might think it will be difficult and complicated, we might ask ourselves, is that necessary?

I used to eat anything that I could grab on my way home or from the fridge before I let myself melt on the sofa after an overwhelmed day. When it was time to eat, I was already tired and I was not disciplined or aware enough to take my food  serious. My priorities were set: first everything, then I might think about what I eat with not even paying attention of the quality of my foods.

I remember letting my maid go to the food store and buy whatever she would like to cook for us. I was so no aware of how important nutrition is and how important is to keep my ENERGY level.

When I discovered another way of eating, my first question was, ok, now what should I cook? No grains? What should I do when my hormones get crazy every month? I want to eat some pancakes every now and then, I want to cook birthday cakes, I want to eat some tacos!

Well, after knowing what Gluten does to my body  I started to try and experiment Gluten Free recipes, and let me tell you, I am having fun cooking them, they are so tasty, delicious & EASY…

Ok, before going to the fun 5 substitute ingredients, I would like to point out what actually gluten is, an alien?

Do you remember at school having to make pinatas for homework? ok, ok, maybe not in your country but in mine we did, and I remember using wheat flour as a GLUE! mixing the flour with water. Can you picture eating glue, or having glue in your stomach.

When gluten reaches the digestive tract and is exposed to the cells of the immune system, they mistakenly believe that it is coming from some sort of foreign invader (yeap, that’s right, an alien), like a bacteria. So, of course the immune system wants to attack the alien (I just like to use this word :P) but instead It starts to atacck/eat the intestine cells…We eat ourselves from inside out! The name of this disease is called Celiac, Gluten Sensitivity is also another disorder and have similar syntoms including bloating, stomach pain, fatigue, diarrhea, as well as pain in the bones and joints. Also people with irritable bowel syndrome have reaction to gluten.

What I really found out in myself is that I had/might still have ADDICTION for wheat flour, it is said that wheat flour have addictive peptides (small proteins that might get all the way to your brain) besides what eating wheat flour meant for me. (Those lovely times spending with my Granny & Mother making squash empanadas, sugar gorditas & wheat flour Tortillas) It really has a HABIT and emotional attachment.

So enough of the reason and let’s have fun with the HEALTHY substitutes:

  1. Coconut flour & Almond flour instead of wheat or corn flour
  2. Zucchini/Squash Pasta instead of noodle pasta
  3. Green leaves tortilla instead of wheat/corn ones
  4. Cauliflower rice instead white rice
  5. Nuts instead of croutons (in your fav salad mix)
